For something truly unforgettable, the Roasted Duck Curry is an elegant fusion of savoury and sweet. This spicy red curry is infused with coconut milk, pineapple, grapes, cherry tomatoes, and fresh chilli, creating layers of tropical warmth. The succulent duck slices add richness, while the fruit offers a bright contrast.
This dish showcases the chef’s artistry, balancing textures and flavours in a way that’s both indulgent and well-balanced. It’s a popular order among regulars and a proud highlight of the menu.
Behind the Dish: Duck curry is often served in Thailand during special family gatherings. At Sir And Madam, the duck is roasted in-house to achieve the perfect crisp skin before being added to the curry.
The Panang Curry is a crowd-pleaser. Thicker and creamier than its green or red counterparts, it features coconut milk, chilli, and kaffir lime leaves, with a luscious texture and bold nutty undertones.

Unlike most Thai curries, Prik King is a dry curry, meaning it’s cooked with a thick paste and little liquid. This gives the dish an intense flavour concentration. The version at Sir And Madam features crispy chicken and green beans, all coated in a fiery red curry paste.

How It’s Made: The chefs use a homemade curry paste, rich in dried chillies and galangal, stir-fried at high heat to intensify the aroma before tossing in the chicken.

I recently visited Sir And Madam Thai in West Byfleet after reading about their top 7 dishes, and wow, the Roasted Duck Curry really stood out. Sweet, spicy, and perfectly balanced. You can tell the chefs take pride in their food. Friendly staff, generous portions, and everything was beautifully presented. A half-star off only because I wish the menu had a few more dessert options. Still, easily one of the best Thai meals I’ve had in the UK!
I’ve eaten at Sir And Madam Thai Restaurant a few times now, and the food never disappoints. The Green Curry and Panang Curry are bursting with flavour — creamy, spicy, and so comforting. The restaurant is beautifully presented and has a welcoming vibe. Only reason I’m giving 4 stars instead of 5 is because the service can be a touch slow during busy times. That said, it’s worth the wait for quality this good!
